A melanose \u00e9 um processo de oxida\u00e7\u00e3o enzim\u00e1tica que ocorre geralmente ap\u00f3s a morte do animal, pela a\u00e7\u00e3o das enzimas tirosinase ou fenoloxidase (G\u00f3es, 2005). Ela inicia com o aparecimento de manchas escuras no exoesqueleto (carapa\u00e7a), na base dos ple\u00f3podos e dos perei\u00f3podos (patas) e no final do corpo do camar\u00e3o (telson). O escurecimento do camar\u00e3o afeta o aspecto do produto, mas n\u00e3o causa danos \u00e0 sa\u00fade humana.<\/span><\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">A melanose come\u00e7a a aparecer ap\u00f3s 48 horas de armazenamento em gelo, devido a redu\u00e7\u00e3o da prote\u00e7\u00e3o oferecida pelo tratamento com metabissulfito, quando apenas em presen\u00e7a de gelo (Eduardo R Flores e D\u00edaz, 2006). O mesmo n\u00e3o ocorre com camar\u00f5es que s\u00e3o armazenados em gelo por at\u00e9 24 horas e congelados em seguida, quando os defeitos de qualidade aparentes reduzem para menos de 50% dos animais (Eduardo R Flores e D\u00edaz, 2006). H\u00e1, portanto, necessidade de executar um processamento r\u00e1pido e evitar que os camar\u00f5es permane\u00e7am por longo tempo sem congelamento.<\/span><\/p>\n<p style=\"text-align: justify;\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\"><span id=\"docs-internal-guid-baa572ac-d55e-fb77-c02d-fc50a0f32b9d\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">Entretanto, o uso do metabissulfito de s\u00f3dio ou pot\u00e1ssio deve ser realizado com cautela. A inala\u00e7\u00e3o destes produtos \u00e9 prejudicial \u00e0 sa\u00fade. O manipulador deve usar m\u00e1scara com filtro qu\u00edmico para vapores inorg\u00e2nicos (para nariz e boca) e prestar aten\u00e7\u00e3o na dire\u00e7\u00e3o do vento, que poder\u00e1 transportar o produto para dire\u00e7\u00f5es indesejadas. Deve-se utilizar equipamentos de prote\u00e7\u00e3o individual (EPIs), tais como, luva de borracha que cubram os antebra\u00e7os, \u00f3culos de prote\u00e7\u00e3o, capa, botas imperme\u00e1veis de cano longo e roupas imperme\u00e1veis.<\/span><\/span><\/span><\/p>\n<p style=\"text-align: justify;\"><span id=\"docs-internal-guid-baa572ac-d55f-0b1c-e31b-2f651cd62db7\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">Nas fazendas de camar\u00e3o, o procedimento usual \u00e9 a imers\u00e3o dos camar\u00f5es despescados em \u00e1gua contendo gelo e metabissulfito de s\u00f3dio, para provocar uma morte r\u00e1pida e inibir a melanose (Mendes, 2004). O FDA (<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; font-style: italic; vertical-align: baseline; white-space: pre-wrap;\">Food and Drug Administration<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">), dos Estados Unidos, limita a quantidade deste produto em 1,25% por 10 min., por\u00e9m, na pr\u00e1tica, este protocolo \u00e9 insuficiente para prevenir a melanose, portanto, normalmente utiliza-se 5 a 10% por 2 a 20 min. (Mendes, 2004).<\/span><\/span><span id=\"docs-internal-guid-baa572ac-d55e-cddc-db2b-4cb843f6ee1f\"><\/span><\/p>\n<p style=\"text-align: justify;\"><span id=\"docs-internal-guid-baa572ac-d55f-346d-68d8-3c2c9c736ec4\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">Derivados de sulfito t\u00eam efeitos potencialmente patog\u00eanicos (Gunnison<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; font-style: italic; vertical-align: baseline; white-space: pre-wrap;\"> et al.<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">, 1987), existindo a necessidade de se desenvolver t\u00e9cnicas alternativas que minimizem os riscos para a sa\u00fade p\u00fablica e sejam de f\u00e1cil implanta\u00e7\u00e3o (Bono<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; font-style: italic; vertical-align: baseline; white-space: pre-wrap;\"> et al.<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">, 2012).<\/span><\/span><\/p>\n<p style=\"text-align: justify;\"><span id=\"docs-internal-guid-baa572ac-d55f-483b-16d0-0e20a228494e\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">Pensando nisso, outros aditivos anti-melan\u00f3ticos, como uma f\u00f3rmula baseada em 4-hexilresorcinol, t\u00eam sido estudados em trabalhos recentes, mas eles sempre ir\u00e3o carregar o fardo de ser categorizados como tratamentos qu\u00edmicos (Bono<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; font-style: italic; vertical-align: baseline; white-space: pre-wrap;\"> et al.<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">, 2012). Por este motivo, outras t\u00e9cnicas t\u00eam sido testas para substituir o uso destes qu\u00edmicos. A aplica\u00e7\u00e3o precoce de t\u00e9cnicas embalagem em atmosfera modificada, especialmente embalagens em atmosfera de N<\/span><span style=\"font-size: 8.8px; font-family: Cabin; background-color: transparent; vertical-align: sub; white-space: pre-wrap;\">2<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\"> (100%) em combina\u00e7\u00e3o com o congelamento e a armazenagem sob congelamento, tem-se mostrado eficientes na preven\u00e7\u00e3o da melanose e outras deteriora\u00e7\u00f5es qu\u00edmica induzida por oxig\u00eanio (Bono<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; font-style: italic; vertical-align: baseline; white-space: pre-wrap;\"> et al.<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">, 2012). <\/span><\/span><\/p>\n<p style=\"text-align: justify;\"><span id=\"docs-internal-guid-baa572ac-d55f-5ea0-0e16-2e8a78e8b3ad\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">Apesar da efic\u00e1cia demonstrada por outros aditivos que retardam a forma\u00e7\u00e3o de pontos pretos no camar\u00e3o, mesmo utilizando baixa dosagem, tal como 4-hexilresorcinol, os sulfitos s\u00e3o ainda largamente utilizados. Por este motivo, os n\u00edveis residuais destes sulfitos na carne dos camar\u00f5es est\u00e3o muitas vezes acima dos limites estabelecidos por lei (Bono<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; font-style: italic; vertical-align: baseline; white-space: pre-wrap;\"> et al.<\/span><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">, 2012).<\/span><\/span><\/p>\n<p style=\"text-align: justify;\"><span id=\"docs-internal-guid-baa572ac-d55f-76b0-2f7e-9e1a28d54ac5\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">Al\u00e9m disso, pode haver lan\u00e7amento de res\u00edduos do produto em corpos h\u00eddricos, provocando a morte da flora e da fauna aqu\u00e1tica da regi\u00e3o adjacente e o aumento do teor residual de di\u00f3xido de enxofre no camar\u00e3o, ultrapassando o limite m\u00e1ximo regulamentado pela legisla\u00e7\u00e3o brasileira (100 ppm), tornando o camar\u00e3o prejudicial \u00e0 sa\u00fade do consumidor (Mendes, 2004). Isto porque o metabissulfito de s\u00f3dio a partir de rea\u00e7\u00f5es com o oxig\u00eanio dissolvido na \u00e1gua, forma novas subst\u00e2ncias, que levam a queda do pH da \u00e1gua, queda da alcalinidade e aumento do consumo de oxig\u00eanio (Figura 2).<\/span><\/span><\/p>\n<p><img decoding=\"async\" class=\" size-full wp-image-1604\" src=\"https:\/\/gia.org.br\/portal\/wp-content\/uploads\/2017\/01\/Fig.-2.png\" alt=\"Fig. 2\" style=\"display: block; margin-left: auto; margin-right: auto;\" width=\"507\" height=\"765\" srcset=\"https:\/\/gia.org.br\/portal\/wp-content\/uploads\/2017\/01\/Fig.-2.png 507w, https:\/\/gia.org.br\/portal\/wp-content\/uploads\/2017\/01\/Fig.-2-199x300.png 199w, https:\/\/gia.org.br\/portal\/wp-content\/uploads\/2017\/01\/Fig.-2-440x664.png 440w\" sizes=\"(max-width: 507px) 100vw, 507px\" \/><\/p>\n<p style=\"text-align: center;\">Figura 2. Concentra\u00e7\u00f5es acima de 4% s\u00e3o inapropriadas, por concentrarem res\u00edduos acima dos limites permitidos por lei.<\/span><\/p>\n<p dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 10pt; text-indent: 18pt; text-align: justify;\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">O uso do Metabilssulfito de S\u00f3dio associado ao \u00c1cido C\u00edtrico tem apresentado efici\u00eancia na preven\u00e7\u00e3o da melanose (Morais, 1995).<\/span><\/p>\n<p dir=\"ltr\" style=\"line-height: 1.38; margin-top: 0pt; margin-bottom: 10pt; text-indent: 18pt; text-align: justify;\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\"><\/span><span id=\"docs-internal-guid-baa572ac-d55f-c566-e3ab-cdd4fa2572e7\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">Portanto, desde que se utilize os sulfitos em concentra\u00e7\u00f5es recomendadas, seguindo as boas pr\u00e1ticas de manipula\u00e7\u00e3o deste produto, com medidas de cuidado a seguran\u00e7a do trabalhador, os riscos ser\u00e3o reduzidos de forma significativa.<\/span><\/span><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Refer\u00eancias<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p dir=\"ltr\" style=\"line-height: 1.2; margin-top: 0pt; margin-bottom: 10pt; text-align: justify;\"><span style=\"font-size: 14.6667px; font-family: Cabin; background-color: transparent; vertical-align: baseline; white-space: pre-wrap;\">BONO, G. &nbsp;et al.
